Description

Ingredients

  • 2 cups chopped rhubarb (fresh or frozen)
  • 1 cup sugar (white or coconut)
  • 1 cup self-rising flour (or substitute with 1 cup all-purpose flour + 1½ tsp baking powder + ¼ tsp salt)

Instructions

  1. Preheat oven to 350°F (175°C) and grease or line an 8×8-inch baking dish.
  2. In a medium bowl, combine flour and sugar, then stir in rhubarb until well coated.
  3. Press mixture evenly into the prepared pan using the back of a spoon or clean hands.
  4. Bake for 35–40 minutes until golden and slightly crisp on edges. Toothpick should come out with moist crumbs.
