- 2 cups chopped rhubarb (fresh or frozen)
- 1 cup sugar (white or coconut)
- 1 cup self-rising flour (or substitute with 1 cup all-purpose flour + 1½ tsp baking powder + ¼ tsp salt)
Instructions
- Preheat oven to 350°F (175°C) and grease or line an 8×8-inch baking dish.
- In a medium bowl, combine flour and sugar, then stir in rhubarb until well coated.
- Press mixture evenly into the prepared pan using the back of a spoon or clean hands.
- Bake for 35–40 minutes until golden and slightly crisp on edges. Toothpick should come out with moist crumbs.
- Cool completely before cutting into squares. They firm up as they cool for easier slicing.
Notes
Use fresh rhubarb for best flavor and texture. These squares are freezer-friendly and even tastier the next day!
