- 6–7 fresh peaches, peeled and sliced (about 5 cups)
- ¼ cup granulated sugar
- 2 tablespoons brown sugar
- 1 tablespoon lemon juice
- 2 tablespoons all-purpose flour (or cornstarch for GF)
- ½ teaspoon cinnamon
- 1 teaspoon vanilla extract
- ¾ cup old-fashioned rolled oats
- ½ cup all-purpose flour
- ½ cup brown sugar, packed
- ¼ teaspoon salt
- ½ teaspoon cinnamon
- ½ cup unsalted butter, melted
- Optional: ¼ cup chopped pecans or walnuts
Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8 or 9×9-inch baking dish.
- In a large bowl, mix peach slices with granulated sugar, brown sugar, lemon juice, flour, cinnamon, and vanilla. Toss to coat, then pour into prepared dish.
- In a separate bowl, stir together oats, flour, brown sugar, salt, and cinnamon. Add melted butter and mix until crumbly.
- Sprinkle the topping evenly over the peaches.
- Bake for 35–40 minutes, until the topping is golden and the filling is bubbling.
- Let cool for 10–15 minutes before serving warm with ice cream or whipped cream.
Notes
Use fresh, frozen, or canned peaches. Let crisp rest before serving to allow the filling to thicken. Easily doubled for a crowd using a 9×13 pan.
