- 2 cups mashed potatoes
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1/4 cup chopped chives
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: 1/4 cup cooked bacon bits
Instructions
- Preheat oven to 375°F (190°C). Grease a mini muffin tin or line a baking sheet with parchment paper.
- In a large bowl, mix mashed potatoes, cheddar cheese, Parmesan cheese, eggs, chives, salt, and pepper until well combined.
- Scoop about 1-2 tablespoons of the mixture into each mini muffin cup or shape into small balls and place on the baking sheet.
- Bake for 20-25 minutes until golden brown and crispy on the outside.
- Let cool for a few minutes before serving.
Notes
For extra crispiness, brush the puffs with melted butter before baking. Serve with sour cream, ranch, or your favorite dipping sauce.
