- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 1/4 cup sugar
- 1 teaspoon cinnamon
- 24 oz cream cheese, softened
- 1 cup sugar
- 3 eggs
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 1/2 cup brown sugar
- 1 tablespoon cinnamon
- 1/4 cup melted butter
- 1 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 325°F (165°C).
- Combine graham cracker crumbs, sugar, and cinnamon in a bowl.
- Add melted butter and mix until crumbs are coated.
- Press mixture into the bottom of a springform pan and bake for 10 minutes.
- In a large bowl, beat cream cheese until smooth.
- Add sugar and mix until combined.
- Beat in eggs one at a time, then add sour cream and vanilla extract.
- Pour half of the cheesecake filling into the crust.
- In a small bowl, mix brown sugar, cinnamon, and melted butter.
- Drop spoonfuls of cinnamon mixture onto the filling and swirl with a knife.
- Repeat with remaining filling and cinnamon mixture.
- Bake in a water bath for 50-60 minutes until the center is set.
- Turn off oven and let cheesecake cool inside with the door ajar for an hour.
- Remove from oven and let cool completely before refrigerating.
- In a small bowl, whisk powdered sugar, milk, and vanilla extract to make glaze.
- Drizzle glaze over chilled cheesecake before serving.
