Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 1/4 cup sugar
  • 1 teaspoon cinnamon
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 3 eggs
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 1 tablespoon cinnamon
  • 1/4 cup melted butter
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Combine graham cracker crumbs, sugar, and cinnamon in a bowl.
  3. Add melted butter and mix until crumbs are coated.
  4. Press mixture into the bottom of a springform pan and bake for 10 minutes.
  5. In a large bowl, beat cream cheese until smooth.
  6. Add sugar and mix until combined.
  7. Beat in eggs one at a time, then add sour cream and vanilla extract.
  8. Pour half of the cheesecake filling into the crust.
  9. In a small bowl, mix brown sugar, cinnamon, and melted butter.
  10. Drop spoonfuls of cinnamon mixture onto the filling and swirl with a knife.
  11. Repeat with remaining filling and cinnamon mixture.
  12. Bake in a water bath for 50-60 minutes until the center is set.
  13. Turn off oven and let cheesecake cool inside with the door ajar for an hour.
  14. Remove from oven and let cool completely before refrigerating.
  15. In a small bowl, whisk powdered sugar, milk, and vanilla extract to make glaze.
  16. Drizzle glaze over chilled cheesecake before serving.

Notes

For best results, let cheesecake chill overnight before serving for enhanced flavor and texture.
