- 3 ripe bananas, mashed
- 1/2 cup cottage cheese
- 2 eggs
- 1/3 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose or whole wheat flour

- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/3 cup melted butter or coconut oil
- 1/2 cup chopped walnuts or chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- In a large bowl, mash bananas and mix with cottage cheese until smooth.
- Whisk in eggs, honey (or maple syrup), vanilla, and melted butter.
- In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
- Gradually add dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
- Fold in walnuts or chocolate chips if using.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

For a dairy-free version, substitute cottage cheese with a plant-based alternative like blended silken tofu.
