- 2 boneless, skinless chicken breasts
- 12 oz rotini pasta
- 2 tbsp olive oil
- 2 tbsp butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley (for garnish)
Instructions
- Bring a large pot of salted water to a boil. Cook rotini pasta according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.
- Season chicken breasts with salt, pepper, and Italian seasoning.
- In a large skillet, heat olive oil over medium-high heat. Cook chicken for 6-7 minutes per side until golden brown and fully cooked. Remove from skillet, let rest, then slice into bite-sized pieces.
- In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Pour in heavy cream and bring to a gentle simmer. Cook for 5 minutes until slightly thickened.
- Stir in grated Parmesan cheese and mix until smooth.
- Add cooked pasta and sliced chicken to the sauce, tossing to coat evenly. If sauce is too thick, add reserved pasta water gradually to reach desired consistency.
- Garnish with chopped fresh parsley and additional Parmesan cheese before serving.
Notes
For a lighter version, substitute heavy cream with half-and-half or milk. Add red pepper flakes for a spicy kick!
