Description

A hearty vegetarian lasagna that combines the creamy richness of white sauce with the earthy flavors of mushrooms and the health benefits of spinach. A comforting and nutritious twist on a classic favorite!


Ingredients

  • Lasagna noodles (no-boil or regular)
  • Fresh spinach (or frozen, thawed and drained)
  • Mushrooms (button, cremini, or a mix)
  • Ricotta cheese
  • Shredded mozzarella cheese
  • Grated parmesan cheese
  • Heavy cream (or milk alternative)
  • Garlic (minced)
  • Olive oil
  • Butter
  • All-purpose flour
  • Ground nutmeg (optional)
  • Salt and pepper (to taste)

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté mushrooms until tender, about 5-7 minutes. Add spinach and cook until wilted. If using frozen spinach, ensure excess water is squeezed out. Set aside.
  2. In a saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant. Stir in flour to form a roux and cook for 1 minute. Gradually whisk in heavy cream, stirring until the sauce thickens, about 5-7 minutes. Season with salt, pepper, and nutmeg if desired.
  3. Preheat oven to 375°F (190°C). Spread a thin layer of the white sauce in the bottom of a baking dish. Add a layer of lasagna noodles, followed by sautéed spinach and mushrooms, ricotta, shredded mozzarella, and parmesan. Repeat layers until all ingredients are used, finishing with mozzarella and parmesan on top.
  4. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the top is golden and bubbly. Let rest for 10 minutes before serving.

Notes

For a gluten-free version, substitute lasagna noodles with zucchini slices or gluten-free pasta. Use vegan ricotta and non-dairy milk for a vegan option.
