Ingredients
- Lasagna noodles (no-boil or regular)
- Fresh spinach (or frozen, thawed and drained)
- Mushrooms (button, cremini, or a mix)
- Ricotta cheese
- Shredded mozzarella cheese
- Grated parmesan cheese
- Heavy cream (or milk alternative)
- Garlic (minced)
- Olive oil
- Butter
- All-purpose flour
- Ground nutmeg (optional)
- Salt and pepper (to taste)
Instructions
- Heat olive oil in a skillet over medium heat. Sauté mushrooms until tender, about 5-7 minutes. Add spinach and cook until wilted. If using frozen spinach, ensure excess water is squeezed out. Set aside.
- In a saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant. Stir in flour to form a roux and cook for 1 minute. Gradually whisk in heavy cream, stirring until the sauce thickens, about 5-7 minutes. Season with salt, pepper, and nutmeg if desired.
- Preheat oven to 375°F (190°C). Spread a thin layer of the white sauce in the bottom of a baking dish. Add a layer of lasagna noodles, followed by sautéed spinach and mushrooms, ricotta, shredded mozzarella, and parmesan. Repeat layers until all ingredients are used, finishing with mozzarella and parmesan on top.
- Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the top is golden and bubbly. Let rest for 10 minutes before serving.
Notes
For a gluten-free version, substitute lasagna noodles with zucchini slices or gluten-free pasta. Use vegan ricotta and non-dairy milk for a vegan option.
