Ingredients

  • 1.5 lbs ground beef
  • 1 packet French onion soup mix
  • 1 large onion, thinly sliced
  • 1 cup breadcrumbs (fresh or panko)
  • 1 egg
  • ½ cup milk
  • 1 cup shredded Swiss cheese
  • Salt and pepper, to taste

Instructions

  1. In a skillet over medium heat, caramelize sliced onions for 10–15 minutes until golden and fragrant. Set aside to cool.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, egg, milk, French onion soup mix, and the caramelized onions. Mix thoroughly and season with salt and pepper.
  3. Shape the mixture into a loaf and transfer it into a crockpot. Press down slightly for even cooking.
  4. Cover and cook on low for 6–7 hours, ensuring the meatloaf remains tender and flavorful.
  5. 15 minutes before the end of cooking, sprinkle shredded Swiss cheese over the meatloaf. Cover and let the cheese melt into a gooey topping.
  6. Slice and serve with mashed potatoes, steamed vegetables, or garlic bread for a complete meal.

Notes

For extra flavor, use a mix of ground beef and ground pork. You can substitute Swiss cheese with cheddar or mozzarella for a different twist.
