- 1 packet French onion soup mix
- 1 large onion, thinly sliced
- 1 cup breadcrumbs (fresh or panko)
- 1 egg
- ½ cup milk
- 1 cup shredded Swiss cheese
- Salt and pepper, to taste
Instructions
- In a skillet over medium heat, caramelize sliced onions for 10–15 minutes until golden and fragrant. Set aside to cool.
- In a large mixing bowl, combine ground beef, breadcrumbs, egg, milk, French onion soup mix, and the caramelized onions. Mix thoroughly and season with salt and pepper.
- Shape the mixture into a loaf and transfer it into a crockpot. Press down slightly for even cooking.
- Cover and cook on low for 6–7 hours, ensuring the meatloaf remains tender and flavorful.
- 15 minutes before the end of cooking, sprinkle shredded Swiss cheese over the meatloaf. Cover and let the cheese melt into a gooey topping.
- Slice and serve with mashed potatoes, steamed vegetables, or garlic bread for a complete meal.
Notes
For extra flavor, use a mix of ground beef and ground pork. You can substitute Swiss cheese with cheddar or mozzarella for a different twist.
