- 1 cup all-purpose flour
- ¼ cup granulated sugar
- 1½ teaspoons baking powder
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg (optional)
- ¼ teaspoon salt
- ⅓ cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon melted butter
- 1–1½ cups fresh peaches, peeled and diced
- Vegetable or canola oil for frying
- 1 cup powdered sugar
- 1–2 tablespoons milk or cream
- ½ teaspoon vanilla extract
Instructions
- Heat 2–3 inches of oil in a heavy-bottomed skillet to 350–365°F (175–185°C).
- In a bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
- In a separate bowl, whisk together milk, egg, vanilla, and melted butter.
- Stir wet ingredients into the dry mixture until just combined. Gently fold in diced peaches.
- Using a cookie scoop or spoon, drop about 2 tablespoons of batter per fritter into hot oil. Fry 2–3 minutes per side until golden and puffed.
- Remove with a slotted spoon and drain on a wire rack over paper towels. Let cool slightly.
- In a small bowl, whisk together powdered sugar, milk, and vanilla for the glaze.
- Drizzle glaze over warm fritters or dip them in. Let set before serving.
Notes
Fritters are best served warm the day they’re made. For best results, glaze while still slightly warm. Store leftovers uncovered to preserve crispiness.
