- 2 cups cherry tomatoes, halved
- 1 large English cucumber, thinly sliced (or 2–3 Persian cucumbers)
- 1 cup mozzarella balls (bocconcini or ciliegine)
- ¼ cup fresh basil leaves, torn or julienned
- Salt and pepper to taste
- 1–2 tbsp extra virgin olive oil
- 1 tbsp balsamic glaze or vinegar (adjust to taste)
Instructions
- Wash and halve the cherry tomatoes. Thinly slice the cucumber. Tear or julienne the basil leaves.
- In a large mixing bowl, combine the tomatoes, cucumbers, mozzarella, and basil.
- Drizzle with olive oil and balsamic glaze or vinegar. Season with salt and pepper.
- Toss gently to coat everything evenly. Serve immediately or chill for 15–30 minutes to let flavors meld.
Notes
For best flavor, use sweet ripe tomatoes and thin-skinned cucumbers like English or Persian. Add basil just before serving for freshness.
