Ingredients

  • 2 cups cherry tomatoes, halved
  • 1 large English cucumber, thinly sliced (or 23 Persian cucumbers)
  • 1 cup mozzarella balls (bocconcini or ciliegine)
  • ¼ cup fresh basil leaves, torn or julienned
  • Salt and pepper to taste
  • 12 tbsp extra virgin olive oil
  • 1 tbsp balsamic glaze or vinegar (adjust to taste)

Instructions

  1. Wash and halve the cherry tomatoes. Thinly slice the cucumber. Tear or julienne the basil leaves.
  2. In a large mixing bowl, combine the tomatoes, cucumbers, mozzarella, and basil.
  3. Drizzle with olive oil and balsamic glaze or vinegar. Season with salt and pepper.
  4. Toss gently to coat everything evenly. Serve immediately or chill for 15–30 minutes to let flavors meld.
