A crisp and refreshing twist on the classic Caprese, this salad features hydrating cucumber, juicy tomatoes, fresh mozzarella, and basil tossed in a tangy balsamic dressing—perfect for hot summer days or elegant entertaining.


Ingredients

  • 2 medium cucumbers (English or Persian), thinly sliced
  • 1 pint cherry tomatoes, halved
  • 8 oz fresh mozzarella (pearls or sliced)
  • ½ small red onion, thinly sliced (optional)
  • ¼ cup fresh basil leaves, torn or julienned
  • 3 tbsp extra virgin olive oil
  • 1 tbsp balsamic glaze (or vinegar)
  • 1 tsp sea salt
  • ½ tsp black pepper
  • Optional: pinch of red pepper flakes or dried oregano

Instructions

  1. Wash and dry all vegetables. Slice cucumbers into thin rounds or half-moons. Halve tomatoes and thinly slice onion if using. Tear basil leaves.
  2. In a large bowl or platter, layer cucumbers, tomatoes, and mozzarella. Scatter onion and basil on top.
  3. In a small bowl or jar, whisk olive oil, balsamic glaze, salt, pepper, and optional seasonings. Adjust taste if needed.
  4. Drizzle dressing over the salad. Gently toss or serve layered, letting guests dress individually.
  5. Garnish with extra basil or balsamic drizzle before serving. Serve chilled.

Notes

Use seedless cucumbers like English or Persian for best results. Add basil just before serving for maximum flavor. Try white balsamic or lemon juice for variations. Great with grilled proteins or as a standalone light meal.
