Ingredients
Scale
- 4 cups chopped rhubarb (fresh or frozen)
- ½ cup granulated sugar (adjust to taste)
- ¼ cup water
- Optional: 1 teaspoon vanilla extract
- Optional: ½ teaspoon cinnamon or ground ginger
- Optional: 1 tablespoon lemon or orange juice/zest
Instructions
- In a medium saucepan, combine rhubarb, sugar, and water. Stir to mix.
- Bring to a boil over medium heat, then reduce to a simmer.
- Cook for 12–15 minutes, stirring occasionally, until rhubarb breaks down.
- Stir in optional flavorings like vanilla, spices, or citrus juice.
- Taste and adjust sweetness if needed.
- For a smooth texture, blend with an immersion blender (cool slightly first).
- Let cool completely, then transfer to jars or containers. Refrigerate or freeze.
Notes
Use fresh or frozen rhubarb. Adjust sugar to taste. For a chunkier sauce, skip blending and mash lightly. Keeps for 1 week in fridge or 3 months in freezer.
