- 2 tablespoons olive oil
- Salt and pepper, to taste
- 2 cups champignons (sliced)
- 4 ounces Boursin cheese (garlic and herb flavor)
- 1/2 cup heavy cream
- 1/4 cup beef broth
- 2 tablespoons butter
- Fresh herbs (optional, for garnish)
Instructions
- Pat the steaks dry with a paper towel and season generously with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear the filet mignon for 3-4 minutes per side until desired doneness is reached. Remove from the pan and let rest.
- In the same skillet, add butter and sauté mushrooms until golden brown, about 4-5 minutes.
- Pour in heavy cream and beef broth, stirring to combine. Let simmer for a minute.
- Add the Boursin cheese and stir until it melts into a creamy sauce.
- Return the steaks to the skillet, spoon sauce over them, and let simmer for 2-3 minutes.
- Garnish with fresh herbs and serve immediately.
Notes
Pair with mashed potatoes, roasted vegetables, or wild rice. A glass of Pinot Noir or Merlot makes an excellent wine pairing.
