Description

  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 cups champignons (sliced)
  • 4 ounces Boursin cheese (garlic and herb flavor)
  • 1/2 cup heavy cream
  • 1/4 cup beef broth
  • 2 tablespoons butter
  • Fresh herbs (optional, for garnish)

Instructions

  1. Pat the steaks dry with a paper towel and season generously with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear the filet mignon for 3-4 minutes per side until desired doneness is reached. Remove from the pan and let rest.
  3. In the same skillet, add butter and sauté mushrooms until golden brown, about 4-5 minutes.
  4. Pour in heavy cream and beef broth, stirring to combine. Let simmer for a minute.
  5. Add the Boursin cheese and stir until it melts into a creamy sauce.
  6. Return the steaks to the skillet, spoon sauce over them, and let simmer for 2-3 minutes.
  7. Garnish with fresh herbs and serve immediately.
