- 1 lb ground beef
- 1 large onion, sliced thinly
- 2 cups long-grain white rice
- 1 can French onion soup (10–12 oz)
- 1 can cream of mushroom soup (10 oz)
- 1/2 cup beef broth
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat and brown the ground beef. Drain excess fat and set aside.
- In the same skillet, sauté the onions until soft and translucent.
- In a large bowl, mix ground beef, onions, French onion soup, cream of mushroom soup, beef broth, and rice. Season with salt and pepper.
- Transfer mixture to a greased casserole dish, cover with foil, and bake for 45 minutes.
- Remove foil, sprinkle shredded cheddar cheese on top, and bake for an additional 10 minutes until cheese is melted.
- Let rest for a few minutes before serving.
Notes
For a healthier version, use brown rice and lean ground turkey. To make it vegetarian, substitute beef with lentils and use vegetable broth.
