- 1 ½ lbs ground chicken
- ½ cup grated Parmesan cheese
- ½ cup breadcrumbs (or almond flour for low-carb option)
- 2 cloves garlic, minced
- 1 egg, beaten
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp onion powder
- ½ cup marinara sauce (optional, for topping)
Instructions
- Preheat oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
- In a large bowl, combine ground chicken, Parmesan, breadcrumbs, garlic, egg, olive oil, and seasonings.
- Transfer the mixture into the loaf pan and shape evenly.
- Bake for 40-45 minutes, or until the internal temperature reaches 165°F (75°C).
- Optional: Spread marinara sauce over the top during the last 10 minutes of baking.
- Let the meatloaf rest for 5-10 minutes before slicing and serving.
Notes
For a keto-friendly version, replace breadcrumbs with almond flour and increase Parmesan cheese for extra richness. Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
