Description

A healthier, flavor-packed twist on traditional meatloaf, this Garlic Parmesan Chicken Meatloaf is made with lean ground chicken, garlic, and Parmesan cheese for a moist and delicious meal.


Ingredients

  • 1 ½ lbs ground chicken
  • ½ cup grated Parmesan cheese
  • ½ cup breadcrumbs (or almond flour for low-carb option)
  • 2 cloves garlic, minced
  • 1 egg, beaten
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp onion powder
  • ½ cup marinara sauce (optional, for topping)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
  2. In a large bowl, combine ground chicken, Parmesan, breadcrumbs, garlic, egg, olive oil, and seasonings.
  3. Transfer the mixture into the loaf pan and shape evenly.
  4. Bake for 40-45 minutes, or until the internal temperature reaches 165°F (75°C).
  5. Optional: Spread marinara sauce over the top during the last 10 minutes of baking.
  6. Let the meatloaf rest for 5-10 minutes before slicing and serving.

Notes
