Ingredients
Scale
- 2 ¾ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 cup unsalted butter, softened (preferably Irish butter)
- 1 ½ cups granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C).
- In a medium bowl, whisk together flour, baking soda, and baking powder. Set aside.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring until the dough forms.
- Roll dough into small 1-inch balls and place them on an ungreased baking sheet, spacing them about 2 inches apart.
- Flatten each dough ball slightly using a fork or fingers.
- Bake for 8-10 minutes, or until the edges are golden brown.
- Allow cookies to cool on a wire rack before serving.
Notes
For extra flavor, use high-quality Irish butter. Chilling the dough for 30 minutes before baking will help prevent spreading.
