Description

  • 2 teaspoons baking powder

  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 cups finely grated carrots
  • 1 cup crushed pineapple, well-drained
  • 1 cup chopped walnuts or pecans (optional)
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 34 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch pan or two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In another bowl, beat eggs, then add granulated sugar, brown sugar, oil, and vanilla extract. Mix until well combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in grated carrots, crushed pineapple, and nuts (if using).
  6. Pour the batter into the prepared pan(s) and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool the cake completely before frosting.
  8. For the frosting, beat softened cream cheese and butter until smooth and creamy.
  9. Gradually add powdered sugar and vanilla extract, beating until you reach the desired consistency.
  10. Frost the cooled cake and garnish with toasted coconut or additional nuts if desired.

Notes

Drain the pineapple well to avoid excess moisture. The cake pairs wonderfully with vanilla ice cream or whipped cream.
