- 2 cups vanilla wafer crumbs
- ½ cup melted butter
- ¼ cup sugar
- 1½ cups white sugar
- ¼ cup all-purpose flour
- ½ teaspoon salt
- 2 cups milk
- 3 egg yolks
- 2 tablespoons butter
- 2 teaspoons vanilla extract
- 3 ripe bananas, sliced
- Whipped cream for topping
Instructions
- Preheat oven to 350°F (175°C).
- Combine vanilla wafer crumbs, melted butter, and sugar in a bowl.
- Press mixture into a 9-inch pie pan to form an even crust.
- Bake for 10 minutes, then let cool completely.
- In a saucepan, whisk together sugar, flour, and salt.
- Gradually add milk, stirring constantly to prevent lumps.
- Cook over medium heat until thickened and boiling.
- In a separate bowl, beat egg yolks, then slowly mix in some of the hot milk mixture to temper.
- Return egg mixture to saucepan and cook for another 2 minutes, stirring constantly.
- Remove from heat and stir in butter and vanilla extract until smooth.
- Let pudding cool, stirring occasionally.
- Arrange banana slices evenly over the cooled crust.
- Pour pudding over bananas and spread evenly.
- Refrigerate for at least 4 hours until set.
- Top with whipped cream before serving.
Notes
For a caramel twist, drizzle caramel sauce over the whipped cream before serving.
