- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ⅓ cup unsweetened cocoa powder
- ½ cup all-purpose flour
- ¼ tsp salt
- ¼ tsp baking powder

Instructions
- Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with liners or lightly grease.
- Melt the butter in a microwave-safe bowl. Whisk in sugar, eggs, and vanilla until smooth. Add cocoa powder, flour, salt, and baking powder. Mix just until combined. Stir in any add-ins.
- Divide the batter evenly among 12 muffin cups (they’ll be about ¾ full). Bake for 18–20 minutes, or until the tops are crackly and a toothpick comes out with moist crumbs (not wet batter!).
- Let cool in the pan for 5 minutes, then transfer to a wire rack. Enjoy warm for gooey centers or cool completely for perfect texture.
Notes
Don’t overmix the batter—just mix until combined. Use good-quality cocoa powder for best flavor. Bake just until moist crumbs remain on a toothpick to avoid drying them out. Let cool slightly before removing from the pan. Customize with mix-ins or top with ganache or sea salt.
