  • For the Chicken Marinade:
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons honey
  • Zest and juice of 2 limes
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • For the Rice:
  • 1 cup jasmine or basmati rice
  • 2 cups water or broth
  • Pinch of salt
  • For the Avocado Layer:
  • 2 ripe avocados, mashed
  • Juice of ½ lime
  • 1 tablespoon chopped fresh cilantro
  • Salt and pepper to taste
  • Optional Toppings:
  • Fresh chopped cilantro
  • Sliced jalapeños
  • Crumbled queso fresco or feta
  • Lime wedges
  • Drizzle of hot sauce or sriracha

Instructions

  1. In a bowl or zip-top bag, mix all marinade ingredients. Add chicken and marinate for 15–30 minutes or up to 4 hours.
  2. Bring water or broth to a boil, add rice and a pinch of salt. Cover, reduce heat, and cook 15–18 minutes. Fluff with fork and set aside.
  3. Mash avocados with lime juice, cilantro, salt, and pepper. Cover to prevent browning.
  4. Cook marinated chicken in a skillet over medium-high heat for 4–6 minutes per side until cooked through. Let rest 5 minutes, then slice.
  5. To Stack: Use a ring mold or layer in a bowl — rice on bottom, then avocado, then sliced chicken.
  6. Top with optional garnishes and serve immediately.

Notes

Let chicken rest before slicing to keep it juicy. Prep components ahead and assemble fresh. For meal prep, layer in jars with lime juice on avocado to prevent browning.
