- 8 oz cream cheese, softened
- ⅓ cup powdered sugar
- 1 egg yolk
- ½ teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, beat butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract, lemon zest, and lemon juice.
- Alternately mix in dry ingredients and sour cream, starting and ending with dry ingredients.
- In a separate bowl, beat cream cheese, powdered sugar, egg yolk, and vanilla extract until smooth.
- Pour half of the batter into the loaf pan, spread cream cheese mixture over it, and top with remaining batter.
- Swirl gently with a knife.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack.
Notes
For extra flavor, drizzle with a simple lemon glaze made from powdered sugar and lemon juice.
