Description

A decadent, multi-layered Black Forest Cake featuring moist chocolate sponge, Kirsch-soaked cherries, airy whipped cream, and elegant chocolate shavings.


Ingredients

  • 1 cup cake flour
  • 1/2 cup high-quality cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 cup sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1/2 cup whole milk
  • 1 tsp vanilla extract
  • 1 1/2 cups cherries (fresh or canned)
  • 1/4 cup Kirschwasser (cherry brandy) or cherry juice
  • 2 tbsp cornstarch
  • 2 tbsp sugar (for cherry filling)
  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract (for whipped cream)
  • 1 cup dark chocolate shavings
  • Whole cherries for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line three 8-inch cake pans with parchment paper.
  2. In a bowl, sift together flour, cocoa powder, baking powder, and baking soda.
  3. In a separate bowl, cream the butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla extract.
  4. Alternately add the dry ingredients with milk, mixing until combined.
  5. Divide the batter into the cake pans and bake for 25-30 minutes. Let the cakes cool completely.
  6. For the cherry filling, heat cherries, sugar, and cornstarch in a saucepan over medium heat until thickened. Stir in Kirschwasser and let cool.
  7. Whip heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  8. To assemble, place one cake layer on a plate, brush with Kirschwasser, spread whipped cream, and top with cherry filling. Repeat for the second layer.
  9. Place the final layer on top and frost the entire cake with whipped cream.
  10. Decorate with chocolate shavings and whole cherries.
  11. Chill for at least an hour before serving.

Notes

For a non-alcoholic version, replace Kirschwasser with cherry juice or almond extract.
