- 1 cup cake flour
- 1/2 cup high-quality cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 3/4 cup sugar
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1/2 cup whole milk
- 1 tsp vanilla extract
- 1 1/2 cups cherries (fresh or canned)
- 1/4 cup Kirschwasser (cherry brandy) or cherry juice
- 2 tbsp cornstarch
- 2 tbsp sugar (for cherry filling)
- 2 cups heavy whipping cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract (for whipped cream)
- 1 cup dark chocolate shavings
- Whole cherries for garnish
Instructions
- Preheat the oven to 350°F (175°C). Grease and line three 8-inch cake pans with parchment paper.
- In a bowl, sift together flour, cocoa powder, baking powder, and baking soda.
- In a separate bowl, cream the butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla extract.
- Alternately add the dry ingredients with milk, mixing until combined.
- Divide the batter into the cake pans and bake for 25-30 minutes. Let the cakes cool completely.
- For the cherry filling, heat cherries, sugar, and cornstarch in a saucepan over medium heat until thickened. Stir in Kirschwasser and let cool.
- Whip heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- To assemble, place one cake layer on a plate, brush with Kirschwasser, spread whipped cream, and top with cherry filling. Repeat for the second layer.
- Place the final layer on top and frost the entire cake with whipped cream.
- Decorate with chocolate shavings and whole cherries.
- Chill for at least an hour before serving.
Notes
For a non-alcoholic version, replace Kirschwasser with cherry juice or almond extract.
