  • 2 large eggs
  • 1 tsp white distilled vinegar
  • 1 tsp vanilla extract
  • Purple food coloring
  • For the Frosting:
  • 8 oz cream cheese (softened)
  • ½ cup unsalted butter (softened)
  • 6 oz white chocolate (melted and cooled)
  • 4 cups confectioners’ sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and lightly flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, baking soda, salt, and cocoa powder.
  3. In a separate bowl, mix oil, buttermilk, eggs, vinegar, and vanilla extract. Gradually add purple food coloring until the desired shade is achieved.
  4. Slowly incorporate the wet ingredients into the dry ingredients, mixing until smooth. Do not overmix.
  5. Divide the batter evenly between the prepared pans and bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool the cakes completely on a wire rack before frosting.
  7. For the frosting, beat softened cream cheese and butter until creamy. Gradually add melted white chocolate and mix until incorporated.
  8. Slowly add confectioners’ sugar, one cup at a time, mixing until smooth. Add vanilla extract and mix well.
  9. Frost and stack the cake layers, then decorate with unicorn-inspired elements such as fondant horns, ears, and a colorful buttercream mane. Add edible glitter and pearls for a magical finish.

Notes

For natural food coloring, use beet juice or purple sweet potato powder. Cake layers can be made ahead and frozen for easier assembly.
