- 2 large eggs
- 1 tsp white distilled vinegar
- 1 tsp vanilla extract
- Purple food coloring
- For the Frosting:
- 8 oz cream cheese (softened)
- ½ cup unsalted butter (softened)
- 6 oz white chocolate (melted and cooled)
- 4 cups confectioners’ sugar
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease and lightly flour two 9-inch round cake pans.
- In a large bowl, whisk together flour, sugar, baking soda, salt, and cocoa powder.
- In a separate bowl, mix oil, buttermilk, eggs, vinegar, and vanilla extract. Gradually add purple food coloring until the desired shade is achieved.
- Slowly incorporate the wet ingredients into the dry ingredients, mixing until smooth. Do not overmix.
- Divide the batter evenly between the prepared pans and bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the cakes completely on a wire rack before frosting.
- For the frosting, beat softened cream cheese and butter until creamy. Gradually add melted white chocolate and mix until incorporated.
- Slowly add confectioners’ sugar, one cup at a time, mixing until smooth. Add vanilla extract and mix well.
- Frost and stack the cake layers, then decorate with unicorn-inspired elements such as fondant horns, ears, and a colorful buttercream mane. Add edible glitter and pearls for a magical finish.
Notes
For natural food coloring, use beet juice or purple sweet potato powder. Cake layers can be made ahead and frozen for easier assembly.
