- 2 slices sourdough bread (or ciabatta or focaccia)
- 1 tbsp olive oil or butter
- 1/4 cup feta cheese, crumbled
- 1/4 cup mozzarella cheese, shredded
- 1 tbsp tzatziki sauce or hummus
- Roasted red peppers (fresh or jarred)
- Fresh spinach (or sautéed)
- Optional: Caramelized onions, olives, or pesto
Instructions
- Heat a skillet over medium heat and lightly butter one side of each bread slice with olive oil or butter.
- On the unbuttered side of one slice of bread, spread tzatziki sauce or hummus.
- Layer with spinach, feta cheese, mozzarella cheese, and roasted red peppers.
- Place the second slice of bread on top, buttered side facing outward.
- Grill the sandwich for 3-4 minutes on each side until the bread is golden brown and the cheese has melted.
- Slice and serve immediately, either on its own or with a side of Greek salad or hummus.
