Description

A delicious reinvention of the classic grilled cheese, featuring Mediterranean flavors like feta cheese, tzatziki sauce, and roasted red peppers for a unique and savory twist.


Ingredients

  • 2 slices sourdough bread (or ciabatta or focaccia)
  • 1 tbsp olive oil or butter
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup mozzarella cheese, shredded
  • 1 tbsp tzatziki sauce or hummus
  • Roasted red peppers (fresh or jarred)
  • Fresh spinach (or sautéed)
  • Optional: Caramelized onions, olives, or pesto

Instructions

  1. Heat a skillet over medium heat and lightly butter one side of each bread slice with olive oil or butter.
  2. On the unbuttered side of one slice of bread, spread tzatziki sauce or hummus.
  3. Layer with spinach, feta cheese, mozzarella cheese, and roasted red peppers.
  4. Place the second slice of bread on top, buttered side facing outward.
  5. Grill the sandwich for 3-4 minutes on each side until the bread is golden brown and the cheese has melted.
