- 2 cups granulated sugar
- 4 large eggs
- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1 1/2 cups mini marshmallows
- 1 cup chopped pecans (optional)
- 1/2 cup butter (for frosting)
- 1/3 cup cocoa powder (for frosting)
- 1/3 cup milk
- 3 cups powdered sugar
- 1 tsp vanilla extract (for frosting)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a large bowl, mix melted butter, sugar, and eggs until smooth.
- Add flour, cocoa powder, vanilla extract, and salt. Stir until well combined.
- Pour the batter into the prepared pan and bake for 25-30 minutes, until a toothpick inserted in the center comes out clean.
- Remove from oven and immediately sprinkle mini marshmallows over the hot cake. Let them melt slightly.
- In a saucepan, melt butter, then whisk in cocoa powder and milk until smooth.
- Gradually add powdered sugar and vanilla extract, whisking until smooth.
- Pour warm frosting over the cake, covering the marshmallows completely.
- Sprinkle with chopped pecans if using.
- Let the cake cool before slicing and serving.
Notes
For an extra gooey texture, gently swirl the melted marshmallows into the frosting before setting. Serve with a scoop of vanilla ice cream for added indulgence!
