Description

Ingredients

  • 1 cup butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 1/2 cups mini marshmallows
  • 1 cup chopped pecans (optional)
  • 1/2 cup butter (for frosting)
  • 1/3 cup cocoa powder (for frosting)
  • 1/3 cup milk
  • 3 cups powdered sugar
  • 1 tsp vanilla extract (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large bowl, mix melted butter, sugar, and eggs until smooth.
  3. Add flour, cocoa powder, vanilla extract, and salt. Stir until well combined.
  4. Pour the batter into the prepared pan and bake for 25-30 minutes, until a toothpick inserted in the center comes out clean.
  5. Remove from oven and immediately sprinkle mini marshmallows over the hot cake. Let them melt slightly.
  6. In a saucepan, melt butter, then whisk in cocoa powder and milk until smooth.
  7. Gradually add powdered sugar and vanilla extract, whisking until smooth.
  8. Pour warm frosting over the cake, covering the marshmallows completely.
  9. Sprinkle with chopped pecans if using.
  10. Let the cake cool before slicing and serving.

Notes

For an extra gooey texture, gently swirl the melted marshmallows into the frosting before setting. Serve with a scoop of vanilla ice cream for added indulgence!
