Made with fluffy white cake, vibrant red and blue gelatin, and topped with whipped topping and sprinkles, this Patriotic Poke Cake is the ultimate nostalgic summer dessert for the 4th of July, Memorial Day, or any celebration!

- 1 box white cake mix (plus eggs, water, and oil as directed)
- 1 (3 oz) box red Jell-O (strawberry or cherry)
- 1 (3 oz) box blue Jell-O (blue raspberry)
- 2 cups boiling water (1 cup per Jell-O flavor)
- 1 cup cold water (½ cup per Jell-O flavor)
- 1 tub (8 oz) whipped topping (Cool Whip), thawed
- Red, white & blue sprinkles
- Optional: fresh berries (strawberries, raspberries, blueberries)
Instructions
- Prepare and bake the white cake mix in a 9×13-inch pan according to package instructions. Let cool at least 30 minutes.
- Use a wooden spoon handle or skewer to poke holes all over the cake, spaced about 1 inch apart, without going through the bottom.
- In two bowls, mix each Jell-O flavor with 1 cup boiling water. Stir to dissolve, then add ½ cup cold water to each.
- Carefully pour red Jell-O into some of the holes and blue Jell-O into the others to create a striped effect.
- Cover the cake and refrigerate for at least 4 hours or overnight to set.
- Spread whipped topping evenly over chilled cake. Decorate with red, white, and blue sprinkles or fresh berries.
- Slice and serve cold. Watch the festive stripes reveal themselves with each cut!
Notes
Use sugar-free Jell-O and light whipped topping for a lighter version. Customize with your favorite colors or fruits. Make ahead and chill overnight for the best results.
