Description

With a buttery shortbread-style crust, creamy filling, juicy peaches, and a golden oat crumble topping — these Peaches and Cream Crumble Bars are as easy as they are beautiful. A dreamy summer dessert for sharing or saving all to yourself!


Ingredients

  • 1½ cups all-purpose flour
  • 1 cup old-fashioned rolled oats
  • ¾ cup brown sugar, packed
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup ( sticks) unsalted butter, melted
  • Optional: ½ teaspoon cinnamon
  • 1 (8 oz) block cream cheese, softened
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 23 fresh peaches, peeled and diced (or 1½ cups canned peaches, well drained)
  • Optional: 1 teaspoon lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 or 9×9-inch baking pan with parchment paper.
  2. In a large bowl, mix flour, oats, brown sugar, baking soda, salt, and cinnamon (if using). Stir in melted butter until crumbly.
  3. Press ⅔ of the mixture into the bottom of the prepared pan. Reserve the remaining ⅓ for the crumble topping.
  4. In another bowl, beat cream cheese until smooth. Add sugar, egg, and vanilla, and mix until creamy and well combined.
  5. Spread the cream layer over the crust. Top evenly with diced peaches. Sprinkle lemon juice if using.
  6. Sprinkle reserved crumble topping over the peaches, leaving some chunks for texture.
  7. Bake for 35–40 minutes, or until the top is golden and the center is set.
  8. Cool completely, then chill for 1–2 hours before slicing.

Notes

Store in the fridge for best texture. These bars freeze well and make an easy, crowd-pleasing dessert. Mix in berries or spices for a custom twist.
