- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 8 oz whipped topping (Cool Whip), divided
- 1 cup brown sugar
- 1/2 cup light corn syrup
- 1/4 cup unsalted butter
- 2 large eggs, beaten
- 1 tsp vanilla extract
- 1 cup chopped pecans
- Caramel sauce, for topping
Instructions
- In a medium bowl, mix graham cracker crumbs and melted butter until combined.
- Press the mixture evenly into the bottom of a 9×13-inch baking dish and chill.
- In a bowl, beat cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until well combined.
- Fold in half of the whipped topping and spread the mixture over the chilled crust.
- In a saucepan over medium heat, combine brown sugar, corn syrup, and butter. Stir until sugar dissolves.
- Slowly whisk some of the hot mixture into the beaten eggs to temper them.
- Return the tempered eggs to the saucepan, stirring continuously.
- Stir in vanilla extract and chopped pecans. Allow the mixture to cool slightly.
- Pour the pecan pie filling over the cream cheese layer and spread evenly.
- Top with remaining whipped topping, smoothing it out evenly.
- Sprinkle chopped pecans on top and drizzle with caramel sauce.
- Cover and refrigerate for at least 4 hours or overnight before serving.
Notes
For added crunch, toast the pecans before adding them to the filling and topping.
