Description

A no-bake layered dessert combining the classic flavors of pecan pie with creamy, indulgent layers. Perfect for holidays and gatherings!


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 8 oz whipped topping (Cool Whip), divided
  • 1 cup brown sugar
  • 1/2 cup light corn syrup
  • 1/4 cup unsalted butter
  • 2 large eggs, beaten
  • 1 tsp vanilla extract
  • 1 cup chopped pecans
  • Caramel sauce, for topping

Instructions

  1. In a medium bowl, mix graham cracker crumbs and melted butter until combined.
  2. Press the mixture evenly into the bottom of a 9×13-inch baking dish and chill.
  3. In a bowl, beat cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until well combined.
  4. Fold in half of the whipped topping and spread the mixture over the chilled crust.
  5. In a saucepan over medium heat, combine brown sugar, corn syrup, and butter. Stir until sugar dissolves.
  6. Slowly whisk some of the hot mixture into the beaten eggs to temper them.
  7. Return the tempered eggs to the saucepan, stirring continuously.
  8. Stir in vanilla extract and chopped pecans. Allow the mixture to cool slightly.
  9. Pour the pecan pie filling over the cream cheese layer and spread evenly.
  10. Top with remaining whipped topping, smoothing it out evenly.
  11. Sprinkle chopped pecans on top and drizzle with caramel sauce.
  12. Cover and refrigerate for at least 4 hours or overnight before serving.

Notes

For added crunch, toast the pecans before adding them to the filling and topping.
