  • 1 cup graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 4 tablespoons unsalted butter, melted
  • For the Cheesecake Filling:
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup sour cream or Greek yogurt
  • Pinch of salt
  • For the Topping:
  • Whipped cream
  • Fresh strawberries, halved or sliced
  • Fresh blueberries
  • Optional: sprinkles or festive flags

Instructions

  1. Preheat oven to 325°F (160°C). Line a 12-cup muffin tin with paper liners.
  2. Mix graham cracker crumbs, sugar, and melted butter until combined. Press about 1 tablespoon into each liner, pressing down firmly.
  3. In a bowl, beat cream cheese until smooth. Add sugar and mix well. Beat in eggs one at a time. Add vanilla, sour cream, and salt; mix until smooth (do not overbeat).
  4. Divide batter evenly among liners. Bake for 18–22 minutes, until centers are set but slightly jiggly. Cool in pan for 10 minutes, then transfer to rack to cool completely.
  5. Refrigerate for at least 2 hours or overnight until fully set.
  6. Before serving, top each cheesecake with whipped cream, strawberries, and blueberries. Add sprinkles or flags for extra flair.

Notes

Use room-temperature ingredients for a smooth batter. Don’t overmix to avoid cracks. Decorate just before serving for the freshest look. You can also freeze undecorated cheesecakes for longer storage.
