- 1 egg
- 1/4 cup mayonnaise
- 1/2 cup cornmeal

- 1/2 tsp onion powder
- 1/4 tsp paprika
- Salt and pepper to taste
- Oil for frying
Instructions
- Drain the canned salmon and flake it into a large bowl, removing any skin or bones if desired.
- Add the egg, mayonnaise, cornmeal, chopped onion, bell pepper, and seasonings. Mix until well combined.
- Shape the mixture into small patties, about 2-3 inches in diameter.
- Heat oil in a skillet over medium-high heat.
- Fry the patties for 3-4 minutes on each side until golden brown and crispy.
- Transfer to a plate lined with paper towels to drain excess oil.
- Serve hot with your favorite sides or dipping sauce.
Notes
For a healthier option, bake the patties at 375°F for 15-20 minutes or air-fry them at 375°F for 8-10 minutes, flipping halfway through.
