- 1 ½ cups whole-wheat flour
- ½ cup pumpkin puree
- ⅓ cup brown sugar
- 1 tsp baking soda
- 2 tsp pumpkin spice mix
- ¼ cup unsalted butter (or vegan substitute)
- 2 tbsp honey (or maple syrup)
- A pinch of salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together whole-wheat flour, baking soda, pumpkin spice, and salt.
- In another bowl, combine pumpkin puree, brown sugar, melted butter, and honey until smooth.
- Gradually add the wet ingredients to the dry ingredients and mix until a dough forms.
- On a floured surface, roll out the dough to ¼-inch thickness.
- Cut the dough into squares or desired shapes using a cookie cutter or knife.
- Place the crackers on a parchment-lined baking sheet and bake for 12–15 minutes, until lightly golden.
- Allow the crackers to cool completely before storing in an airtight container.
Notes
For a gluten-free version, substitute whole-wheat flour with gluten-free all-purpose flour. You can also add a pinch of cayenne for a spicier variation or cocoa powder for a chocolate twist.
