Description

Ingredients

  • 1 ½ cups whole-wheat flour
  • ½ cup pumpkin puree
  • ⅓ cup brown sugar
  • 1 tsp baking soda
  • 2 tsp pumpkin spice mix
  • ¼ cup unsalted butter (or vegan substitute)
  • 2 tbsp honey (or maple syrup)
  • A pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together whole-wheat flour, baking soda, pumpkin spice, and salt.
  3. In another bowl, combine pumpkin puree, brown sugar, melted butter, and honey until smooth.
  4. Gradually add the wet ingredients to the dry ingredients and mix until a dough forms.
  5. On a floured surface, roll out the dough to ¼-inch thickness.
  6. Cut the dough into squares or desired shapes using a cookie cutter or knife.
  7. Place the crackers on a parchment-lined baking sheet and bake for 12–15 minutes, until lightly golden.
  8. Allow the crackers to cool completely before storing in an airtight container.

Notes

For a gluten-free version, substitute whole-wheat flour with gluten-free all-purpose flour. You can also add a pinch of cayenne for a spicier variation or cocoa powder for a chocolate twist.
