- 1 cup fresh strawberries, hulled and finely diced
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- Optional: Melted white chocolate
- Optional: Strawberry glaze or jam
- Optional: Crushed freeze-dried strawberries
- Optional: Sprinkles or gold dust for decoration
Instructions
- If using store-bought cake, trim brown edges and top so it’s flat and flexible.
- Use a rolling pin to gently flatten the cake to about ½ inch thickness.
- In a bowl, beat heavy cream, powdered sugar, and vanilla extract until soft peaks form.
- Lay the cake on parchment or plastic wrap and spread an even layer of whipped cream.
- Sprinkle diced strawberries evenly over the cream.
- Roll the cake from the short side into a tight log using the parchment to guide it.
- Chill the roll in the fridge for at least 30 minutes to firm up.
- Slice the roll into 1-inch thick rounds with a sharp knife.
- Optional: Drizzle with white chocolate or strawberry glaze and decorate as desired.
Notes
For clean slices, chill the roll well and wipe the knife between cuts. Customize with your favorite fruits or fillings!
