- 2 boneless, skinless chicken breasts, cut into chunks
- 1 cup pineapple chunks (fresh or canned)
- ½ cup teriyaki sauce
- 1 bell pepper, sliced
- ½ red onion, sliced
- 1 cup snap peas
- 1 tablespoon olive oil
- Salt and black pepper, to taste
- 1 teaspoon sesame seeds (optional, for garnish)
- 2 green onions, chopped (optional, for garnish)
Instructions
- Preheat grill to medium-high heat or oven to 400°F (200°C).
- Lay out four large pieces of aluminum foil and lightly coat with olive oil.
- Divide the chicken, pineapple, bell pepper, red onion, and snap peas evenly among the foil sheets.
- Drizzle teriyaki sauce over each packet and season with salt and black pepper.
- Fold and seal the foil packets tightly.
- Grill for 20-30 minutes, flipping halfway, or bake for 25-30 minutes until the chicken reaches 165°F (75°C).
- Carefully open the packets (watch for steam) and garnish with sesame seeds and green onions if desired.
- Serve with steamed rice, quinoa, or a fresh salad.
Notes
For extra flavor, marinate the chicken in teriyaki sauce for 30 minutes before assembling the packets.
