- 1 cup sparkling water or beer
- 1/2 teaspoon paprika (optional)

- Fresh fish fillets (cod, haddock, or pollock)
- Vegetable oil for frying
Instructions
- In a large mixing bowl, whisk together the flour, cornstarch, baking powder, salt, paprika, and garlic powder.
- Gradually add the sparkling water or beer while whisking until the batter is smooth and slightly thick.
- Let the batter rest for 10-15 minutes.
- Pat the fish fillets dry with paper towels and lightly season with salt.
- Heat oil in a deep fryer or large pan to 375°F (190°C).
- Dredge the fish in a light layer of flour before dipping into the batter.
- Carefully place the battered fish into the hot oil and fry for 4-6 minutes, or until golden brown and crispy.
- Remove from oil and place on a paper towel to drain excess oil.
- Serve hot with tartar sauce, lemon wedges, and fries for a classic fish and chips meal.
