Ingredients

  • 4 cups cubed seedless watermelon
  • 1/2 cup crumbled feta cheese
  • 1/4 cup thinly sliced red onion
  • 1/3 cup loosely packed fresh basil leaves (torn or chopped)
  • Juice of 1 lime
  • 12 tablespoons olive oil
  • Salt and freshly cracked black pepper, to taste
  • Optional: chili flakes, balsamic glaze, cucumber, or avocado

Instructions

  1. Cube the watermelon, slice the red onion, and tear the basil leaves.
  2. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  3. In a large bowl, gently toss the watermelon, onion, and basil with the dressing.
  4. Sprinkle crumbled feta over the top and gently mix.
  5. Optional: Chill in the fridge for 10–15 minutes to enhance flavor.
  6. Serve with optional garnishes like whole basil leaves or a drizzle of balsamic glaze.

Notes
