- 4 cups cubed seedless watermelon
- 1/2 cup crumbled feta cheese
- 1/4 cup thinly sliced red onion
- 1/3 cup loosely packed fresh basil leaves (torn or chopped)
- Juice of 1 lime
- 1–2 tablespoons olive oil
- Salt and freshly cracked black pepper, to taste
- Optional: chili flakes, balsamic glaze, cucumber, or avocado
Instructions
- Cube the watermelon, slice the red onion, and tear the basil leaves.
- In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
- In a large bowl, gently toss the watermelon, onion, and basil with the dressing.
- Sprinkle crumbled feta over the top and gently mix.
- Optional: Chill in the fridge for 10–15 minutes to enhance flavor.
- Serve with optional garnishes like whole basil leaves or a drizzle of balsamic glaze.
Notes
Use cold watermelon for best refreshment. Tear basil instead of chopping to preserve flavor. Best served fresh. For vegan version, use plant-based feta or avocado.
