A sweet and savory summer salad that’s ridiculously easy, stunningly beautiful, and bursting with juicy watermelon, creamy feta, and fresh mint.
Ingredients

- 4 cups cubed seedless watermelon (chilled)
- 1 cup crumbled feta cheese
- ¼ cup fresh mint leaves, torn or chopped
- 2 tablespoons extra virgin olive oil
- Juice of ½ lime (or a drizzle of balsamic glaze)
- Freshly ground black pepper, to taste
- Optional: thinly sliced red onion, cucumber, or arugula
Instructions
- Cut the watermelon into bite-sized cubes.
- Tear or chop the mint and crumble the feta if needed.
- In a large bowl or serving platter, add the watermelon. Top with crumbled feta and mint.
- Drizzle with olive oil and squeeze lime juice over the top (or use balsamic glaze).
- Finish with freshly ground black pepper.
- Serve immediately or chill for 15 minutes before serving.
Notes
Chill watermelon before use, assemble salad just before serving to avoid sogginess, and skip extra salt—feta is salty enough!
