Description

A sweet and savory summer salad that’s ridiculously easy, stunningly beautiful, and bursting with juicy watermelon, creamy feta, and fresh mint.


Ingredients

Scale
  • 4 cups cubed seedless watermelon (chilled)
  • 1 cup crumbled feta cheese
  • ¼ cup fresh mint leaves, torn or chopped
  • 2 tablespoons extra virgin olive oil
  • Juice of ½ lime (or a drizzle of balsamic glaze)
  • Freshly ground black pepper, to taste
  • Optional: thinly sliced red onion, cucumber, or arugula

Instructions

  1. Cut the watermelon into bite-sized cubes.
  2. Tear or chop the mint and crumble the feta if needed.
  3. In a large bowl or serving platter, add the watermelon. Top with crumbled feta and mint.
  4. Drizzle with olive oil and squeeze lime juice over the top (or use balsamic glaze).
  5. Finish with freshly ground black pepper.
  6. Serve immediately or chill for 15 minutes before serving.

Notes

Chill watermelon before use, assemble salad just before serving to avoid sogginess, and skip extra salt—feta is salty enough!
