Ingredients

- 4 cups of seedless watermelon, cubed
- 1 large cucumber, peeled and sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup red onion, thinly sliced
- 2 tablespoons fresh mint leaves, chopped
- Juice of 1 lime
- 1 tablespoon extra virgin olive oil
- Salt and freshly ground black pepper, to taste
Instructions
- Cut the watermelon into bite-sized cubes and drain excess juice.
- Peel and slice the cucumber into thin half-moons.
- In a large bowl, mix watermelon, cucumber, and red onion.
- Add chopped mint and gently fold in the crumbled feta.
- Drizzle with lime juice and olive oil, season with salt and pepper, and mix gently.
- Chill in the refrigerator for 10–15 minutes before serving.
Notes
Use cold ingredients and avoid overdressing to maintain crispness. Best enjoyed fresh on the day of preparation.
